I'm not sure if you're talking of finding depth to the top of water underground, or the depth of a body of water overall.
In either case the principle is much the same.
You can ask a series of questions which narrow down the depth until you get a figure. So, you could start off by asking it it more than 50 feet? 60 feet? 70 feet? If you get a 'no', then you know it's between 60 and 70 feet. Then you adjust your questioning and ask if it's 61, 62, 63, and so on until you get a 'yes'.
As for saltiness, you can ask, on a scale of 1 to 10 (with 10 being totally salty like the Dead Sea), what the average for this body of water is.
You could, of course, use any scale you want that makes sense to you.
